Gluten... and Dairy, AND Meat !?! {aka the Migraine Diet}

About a year and a half ago I started experimenting with the Paleo diet. To be honest I've gone on and off it, but still keeping focus on eating whole foods over processed. All the while, my weight has been yo-yoing (dramatically ~15-20lbs), my migraines have gotten worse, I've become severely intolerant of dairy and developed dyshidrotic ezcema.  All of which have been super sexy and made life a blast.

I also switched General Practitioners within that time period. The first time I sat down with her, she looked at all my 'illnesses' and flagged them all as textbook autoimmune responses. She suggested a gluten free diet which seemed incredibly overwhelming. She also referred me to a neurologist, but really pushed G-free and said I would need to try it for at least 3 months. I started trying it in April, but after 3 weeks it just became too overwhelming. The more I was reading about it the more 'trying it out' seemed pointless, because if you don't know your degree of sensitivity how do you know if you are feeling the results. Apparently some people can't even tolerate non-gluten foods that merely touched gluten containing food. How am I supposed to know where I am on the scale and control my food that closely!?

After my 8 day migraine I visited the neurologist. The first line of action was looking at my diet to identify triggers and, possibly, trying this 'Low-Tyramine' diet. Recording my food I can do. Low-Tyramine was another beast. There were so many odd restrictions. Not just foods to avoid, but no meat that has been at room temperature longer than 20 minutes. No meat that was cooked over 48hrs ago. I sat there with my cook books in my lap, exasperated, wondering how the heck I could keep protein in my diet without cooking a full lunch at work! Then I reminded myself that I was vegetarian all of high school and college. If I could do it then I could definitely do it again. I've been switching my proteins to fish, but that is only on the approved food list because of 'lack of research'. Still somewhat confused I made an appointment with a nutritionist, hoping to find some clarity and direction.

I had an amazing 2 hour introductory meeting and came out of it with tons of great tips an ideas! However, one of the first things that came out of her mouth was that I should try eliminating gluten as "all (my) symptoms are reflective of autoimmune reactions." I told her I was open to it, but had the concerns about length and sensitivity I talked about above. She told me that my GP had been wrong about the time it would take to notice the affects and said if I was truly intolerant I would notice effects a few days in. I mentioned my 3 week experiment in April and as soon as I said I had stopped in the beginning of May she interrupted me. "And when did your 8-day migraine start relative to eating gluten?" she asked.  I thought back and realized that my lead-in, tension headaches started the day after and the full blow migraine 3 days after reintroducing gluten to my diet. I hadn't realized that at all and she told me that is a classic reaction to re-introducing trigger foods after an elimination diet.

So here I am, beginning the diary-free, gluten free, low-tyramine excursion. I'm already dreading the extra cooking, but we'll see where it takes me. So far I've lost 4lbs and have noticed quite a difference with 'brain fog'. Lucky for me a lot of blogger's have already started this journey and I'm finding tons of inspiration and recipes from these lovely ladies!

Dairy & Grain Free Berry Tart {speed version}!

This year I was FINALLY able to make it to Life As Griki's 4th of July BBQ. With my new dairy intolerance and Kingsley's food allergies I knew this was the perfect opportunity to try Against All Grain's Dairy-Free - Grain Free Berry Tart!

I woke up Saturday morning excited to head out to the farmers market to pick up some fresh berries and swing by Whole Foods for the extra supplies. I pulled open the recipe page and freaked out that not only did the custard need to 'set' for 5 hours, but the room-temperature, canned coconut milk needed to be refrigerated for the cream to separate. I had already made plans to go to the gym and there was only 4 hours until I had to leave for the party. 

I figured/hoped that if I went shopping now, mixed up the custard and let it sit in the freezer with the coconut milk while I went to the gym and showered. I should have SOMETHING to work with. If the custard was a little liquid-y...well, thats whats plates are for. I do have to say it turned out beautiful and absolutely delicious. I won't lie, I may have eaten some left over coconut cream with some cinnamon sprinkled on it as a snack. 

Only tweak I made to the recipe was instead of adding water to the gelatin I just stirred it into the boiling custard mixture.

I Heart New York!

I spent my 2007 summer interning in New York City and absolutely fell in love. The energy, the architecture, the people, the culture...I don't know where you can get much better. I've been back a few times since and when my friend, A, asked me to join her for her Birthday trip I was happy to oblige!

We stayed at, the historic, Union League Club in Midtown and had this gorgeous view of the Empire State Building from our room!







Since we both have friends that live in the City we spent Friday night on our own. I was able to meet E and our other former roomie L for some Tapas in the West Village. After E and I spent time in Spain we continued our Tapas crawl in SF so extending to NYC was only necessary.  Tertulia was delicious, so quaint and the staff (although they were skeptical about our ability to finish our Paella) was very nice.  It is unfortunate the SF dinner culture just isn't the same.




Maintaining our west coast time schedule, Saturday we got a bit of a late start. We adventured briefly to the Union Square Farmer's market, on to the East Village for Brunch and then Soho for some shopping!  





Saturday night all of our friends joined us at Sfoglia on the UES for A's Birthday Dinner! Again, such a delicious, quaint, but non-pretentious place. Honestly, the BEST sourdough bread I've had in my life...even after living in SF for almost 6 years!






Sunday we ate the most expensive salad's of our life at Bergdorf's and then continued our Shopping adventures. I had unfortunately come down with cold, so was lacking a bit of energy. We found our way to Ralph Lauren on Madison and after a glass of champagne everything was magically better!




We took it easy that afternoon. After a quick nap we ventured to a Jewish deli near by our hotel for some much needed Matzo Ball soup and, of course, pastrami on rye. We strolled the streets of midtown for bit and enjoyed a cup of tea at the acclaimed Starbucks :) It was the perfect evening to end our fantastic weekend.


We had a few hours to burn on Monday and we decided to head back to the UES to hit the stores we missed Sunday evening (Lilly Pulitzer!) and I was able to stock up on some Black and White Cookies before heading off to the airport!

What the Heck is Coconut Flour?

If you remember about a month ago I started the Whole Living 'Cleanse'. It basically focused on eating a lot of, easily digestible fresh fruits and veggies and thats about it. No dairy. No carbs. Nothing processed.

After spending a day in the kitchen preparing my meals for the week, it was fairly easy to maintain and very filling! I felt great, still had energy, was full and felt a whole lot 'cleaner' than I had been.  My cleanse week was immediately followed by the Denver Girls Weekend which, although I gave it my best shot, wasn't exactly cleanse approved.

The 'cleanse' was great, but is very limited in food choices and recipes. After some chatting with friends and further internet investigation I've decided to give Paleo a whole hearted shot. Being dairy free really helped my digestive system, and avoiding carbs is always a good thing right?
I ordered Practically Paleo on a recommendation, but to get a head start I went to the website for the book and found a recipe for a great, paleo friendly, grab and go breakfast. Breakfast is the hardest for me, because I don't want to get up 15 minutes earlier to make a smoothie or an omelet. I want to sleep that extra 15 :) These Apple Streusal Muffins looked like a delicious and convenient option.

ingredients:

  • 3 large green apples, chopped into 1/2 inch pieces (approximately 2 cups) – peeled if you like
  • 3 tablespoons warm water
  • 2 teaspoons cinnamon, divided
  • 1 1/2 tablespoons butter or coconut oil (to make it dairy-free), melted
  • 9 eggs
  • 3 tablespoons coconut milk
  • 1 1/2 tablespoons coconut flour
  • 1/4 teaspoon baking soda

preparation:






  • Preheat oven to 350F.
  • In a medium skillet, sautée the apples, water,  1 1/2 teaspoons of the cinnamon, and butter or coconut oil until the apples are the consistency of chunky applesauce or apple pie filling. Allow the mixture to cool before combining with the egg mixture.








  • In a medium-sized mixing bowl, whisk the eggs,coconut milk, coconut flour, 1/2 teaspoon of cinnamon, baking soda, and salt until well combined. Add the cooled apples, reserving 1/4 cup for a garnish.
  •                                            
  • Spoon egg and apple mixture into parchment cup lined muffin tins—1/4 cup each. Gently spoon about one teaspoon of the remaining apple mixture onto the top of each muffin.
  • Bake for 40 minutes.

Whole Living

I spent the wonderful Christmas holiday back in the midwest for a week! It was beautiful, but freezing white Christmas. The only real complaints I had were a gross, flaky, dry face and no appropriate product to help  and all the heavy cream/egg/sugar/carb based foods that were consumed. I even spent 2 days sick on the couch from richness, and probably dairy overload.  In an effort to get back on track I did some investigating and  have decided to try the 2013 version of the Whole Living Action Plan to Kick off the year.



A few years ago I found the 2011(?) version on Pinterest.  Back then it required a juicer and I wasn't about to go out an buy one. It also had new recipes every day for Breakfast, Lunch and Dinner. A single, working gal on a budget just cannot swing that much shopping and cooking. I tried doing it with smoothies and rotating recipes, but it was still expensive and time consuming.

They've updated and cut down their meal plans and really focused on making them user friendly/make-ahead-able. Per their website:
How This Cleanse Works
1. Go Step By StepWe built this plan around a simple base diet of lentils, fruits and vegetables, and nuts and seeds; these (plus oils and seasonings) are the only ingredients allowed for the first week. The subsequent weeks introduce variety, including fish and gluten-free grains in Week 2 and eggs in Week 3.  
2. Devise a StrategyWe realize that making all of the plan’s recipes is no easy feat. So we’ve streamlined things this year with weekly meal-by-meal plans. To ease prep, some recipes have a make-ahead component, and most recipes make big batches, so you’ll always have a selection of leftovers in the fridge. 
3. Make It Your OwnWhile there are 45 recipes in the cleanse, you can certainly improvise meals; simply follow the ingredient guidelines for each week. You can also carry over your favorite dishes as you enter a new week. Do keep in mind that while you should keep portions modest, counting calories is not part of the program. “This is not a calorie-restricted diet,” Blum says. “This is about food choices.” 

 I took a trip to Whole Foods (in an effort to go completely 'clean') and only spent $45 on everything for the first week! I couldn't believe it. I'm starting today so I'll keep you updated on how it's going and how I'm feeling a long the way.

Thankful Thursday

Happy almost Friday! Being that its November, the month of Thanksgiving, and I'm making a conserted effort to be more positive about my life I thought I'd start doing Thankful Thursday!

Things I'm most thankful for this week:

1) People with everyday manners.
 Please and thank you go a long way and I think our generation forgets that a lot, especially with each other.

2) The right to vote! 
Duh.

3) Fall weather.
